The port city, located on the southeastern coast along the Gulf of Mexico, which was nicknamed the "capital of coffee," was the gateway for coffee to disseminate throughout the country after the first plants arrived in Mexico in the 18th century.

With an elevations of 700-1,400masl and a warm, semi-humid climate with average rainfall of 2,141mm of rain annually, Veracruz is well-suited for Arabica coffee production.

About Green Coffee From Mexico

Coffee growers in Mexico are primarily smallholders, with 70% of the industry made up of producers with less than 10 hectares of land.

In 2015, the Mexican government initiated a national program to renew coffee plantations with new leaf-rust-resistant varietals. Half a million coffee growers in Mexico depend on coffee for their livelihoods. To maximize sustainable coffee production, plants are intercropped with citrus, corn, banana, and other produce for home consumption.

Mexico coffees are celebrated for their balanced sweetness and round chocolate and toffee notes. Today, many Mexican coffees are shade grown under forest canopies. At Finca La Riviera, where the coffee processing for Finca Milan takes place, producer Julio Cesar Madrid Tisnes designed and perfected different fermentation protocols for a variety of methods, including washed, honey, natural, cold press, culturing, and nitrogen fermentations.

In the nitro washed process, ripe coffee cherries are subjected to embryonic stress so that the temperature of the cherries rises and falls to 12 degrees, keeping them in the best condition for further processing.

After pulping, the beans are placed in a bioreactor and inoculated with starter cultures (yeast and bacteria) and fruit must. The bioreactor is sealed and injected with nitrogen to facilitate the metabolic processes of the microorganisms. During this time, temperature, acidity, and Brix degrees are closely monitored against past data in order to time the end of the fermentation stage and initiate oxidation.

After leaving the bioreactor, the coffee beans are dried in solar dryers to 40% moisture then transferred to mechanical dryers until reaching 10% - 12% moisture. The resting period in the warehouse is around 45 days before the coffee is hulled and prepared for export.Julio Cesar Madrid Tisnes is a third-generation coffee grower, and Finca Milan, a 250-hectare estate, has been in his family for over 40 years. Together with two other farms, Finca Riviera and Finca Buenos Aires, his family’s estates have won multiple awards and championships. Most recently, Italian barista, Danielle Ricci earned second place in the World Barista Championships in Athens, Greece.

Located in the central foothills of the Andes Mountains within the Risaralda Department, Finca Milan’s young soil is enriched with nutrients from the relatively recent eruptions of nearby volcanoes. The wide thermal range of the microclimate reaches up to 30ºC in the daytime and can drop to 15ºC in the evening, allowing coffee cherries to develop complex and unique flavors. Wilder began implementing a Tissue Management System (TMS) on his coffee farm six years ago to achieve a productive balance. The system relies on a two-year cycle and is applied in blocks. Caturra, Bourbon, Typica, Geisha, and Java varietals grow here, and their tissue management depends largely on the skeletal style of the trees. In 2020, Wilder also renovated four hectares with new coffee plants. While we met with the women and men driving specialty coffee production, a woman arrived on foot carrying a bag and a basket of pristinely-ripe coffee cherry. She was not a tall person, and it looked like a lot of coffee on her back. We weighed it, and found out she’d carried 110 pounds of coffee for fifteen minutes to get there. While most Ethiopian farmers naturally practice organic farming, few pursue the formal certification process. Buku Sayisa, located in West Guji, is a washing station that specializes in natural processing. Ripe, sorted cherries from farms at an altitude of 2,300 masl are dried for 12 to 15 days on raised beds. By meticulously avoiding overfermentation during the drying process, Buku Sayisa producers craft elegant cup profiles like this G1 coffee with flavor notes of blueberry, honeydew, and jasmine honeysuckle, resulting in a sweet and sugary taste. Traceability is a key focus at Buku Sayisa, where a voucher system is used to track each coffee lot throughout the production chain. The first step post-harvesting involves quick hand sorting to ensure consistency in coloration. The cherries are then placed in float tanks, where lower-density cherries are skimmed off for lower grade coffees or local consumption. Higher-density cherries sink to the bottom and are selected for further processing. Another hand sorting ensures uniformity before pulping. The disc pulper is calibrated for greater control and speed, minimizing damage while retaining maximum mucilage content. After pulping, the parchment undergoes a short fermentation period. The mucilage-heavy coffee is then moved to shaded drying beds, where they are slowly dried under a shade canopy with adequate airflow. This process adds 4 to 5 days to overall drying time, ensuring stable moisture distribution and achieving dialed-in water activity.

Careful timing in covering the parchment is essential to achieve uniformity, producing high-quality honey processed coffees. The color names such as Black, Red, and White Honey refer to the color or amount o mucilage left on the coffee. Black Honey coffees exhibit characteristic black splotches due to the heavy mucilage coverage, while Red Honeys have fewer splotches, which are more red than black. White Honey coffees have the least mucilage and appear more yellow/white in hue overall.

This coffee comes to us through ZEM Coffee, a vertically integrated coffee company founded by Ethiopian and American trio Zele, Emily, and Michael. The farm covers 16 hectares, of which only 2 were initially planted with coffee. By 1998, the entire property was under cultivation, following the traditional cycle of growing, harvesting, washing, drying, and selling. In 2006, Nubia entered the Cup of Excellence and placed 30th, marking the family’s first step into the world of specialty coffee. Jhoan works alongside his brother Diego Vergara, who is in charge of processing, fermentation control, and drying, ensuring that each lot meets the highest quality standards. Together, they have developed replicable processes, including natural, honey, hydro-honey, and washed, that highlight each variety’s potential and have brought Las Flores recognition both nationally and internationally. The extract is continuously refreshed through carbon filtration, ensuring the beans retain their full-bodied character.

This meticulous method removes 99.9% of the caffeine while preserving the coffee’s original profile—bright acidity, rich flavors, and complexity.
