We knew this lot was special, so we asked the grower to provide some extra insight:
"This was our first-ever lot of washed process coffee produced at our Fazenda São José da Boa Vista (aka Fazenda Peixoto). We do not have permanent infra-structure with concrete tanks and flowing water at the farm to produce large lots of washed coffee, so we had to improvise! We covered our trailers with tarp then filled them with depulped cherries (with honey or mucilage around them) which were then submerged in water to ferment for approximately 48 hours covered. We drained the water, re-washed the seeds to remove the mucilage and then dried these seeds on our patios for about 10 days, sunkissed by the Brazilian sun from the tropics."
Coffee orders are consolidated and roasted on Tuesday, then shipped the following Wednesday.
